Milk couverture with Earl Grey tea

Ingredients Preparation
  • 900g
    fresh milk
  • 100g
    35% cream
  • 20g
    dextrose
  • 1g
    neutral ice cream base
  • 20g
    Earl Grey tea
  • 240g
    Jade

Pour the dextrose and neutral for ice cream mixture over the milk and cream.
Bring to a boil and infuse the tea for 4 minutes.
Strain and pour over the couverture and emulsify.
Set aside in the fridge.
Pour into a bottle.
