    infusion
  • 500g
    blackberry pulp

Heat at 140°F/60°C

  • 50g
    fine sugar
  • 10g
    NH pectin

Mix dry and add in

Bring slowly to a boil.
Let cool in 176°F/80°C.

  • 1500g
    CHD-P65ALTOBIO
  • 625g
    CHM-Q32HARM

And pour over

Let melt and stir.

  • 375g
    blackberry cream

Add in

Pour in a frame at 84°F/29°C.
