Raspberry jelly

Ingredients Preparation
  • 125g
    raspberry puree
  • 15g
    glucose

Heat up to 40 °С

  • 4g
    pectin NH
  • 20g
    sugar

Add

Bring to a boil and cook for 2 minutes

  • 15g
    lemon juice

Add

Cook for 1 minute

Let cool and stabilize

 

Raspberry ganache

Ingredients Preparation
  • 25g
    raspberry puree
  • 4g
    Fresh mint
  • 25g
    cream
  • 13g
    glucose

Bring to a boil

  • 60g
    CHM-P40GHA
  • 60g
    CHD-P64EBPU

Cool to 80 °С and pour over chocolate

Emulsify with blender

Leave to stabilize

Use at 30 °С

Shell coating

For Assembly and Finishing

Coat the bonbon shell and leave the chocolate to crystallize.

Add raspberry jelly (1/2 of the shell). Add ganache and leave to stabilize. Cover the bottom of the bonbon.
