Hazelnut chouquettes

HAZELNUT CHOUX PASTRY

ingredients preparation
  • 500g
    milk
  • 10g
    sugar
  • 6g
    salt
  • 250g
    butter

Boil

  • 250g
    weak flour

Add sieved flour and heat for few minutes

  • 200g
    NPN-HA1BY

Put the hot mixture into a mixer and add

  • 200g
    pasteurized egg(s)
  • 200g
    pasteurized egg whites

Mix and add 

  • Q.S.
    NAN-CR-HA5013
  • Q.S.
    brown sugar
  • Q.S.
    pearl sugar

Pipe the choux pastry mixture onto baking trays using star-tipped piping bag and spread the Praliné Grains and the sugars evenly over the top

Bake at 180°C until the pastry rises and finish the bake at 160°C.
