Dark chocolate chip cookies

Invented in the United States of America, chocolate chip cookies have grown into a worldwide success. This recipe yields soft and dense chocolate chip cookies with an intense dark chocolate taste, a nice bite and a smooth mouthfeel. Some caution is called for though: this will instantly turn into your customers' go-to favourite snack and will get them hooked on the spot. Don’t say we didn’t warn you!

Chocolate chip cookies

ingredients preparation

    fresh butter
  • 166g
    brown sugar
  • 1g
    salt

Mix together.

  • 73g
    whole egg(s)

Whip lightly and add.

  • 276g
    pastry flour
  • 4g
    baking soda
  • 2g
    CP

Sieve together and add.

    L811NV
  • 221g
    NIBS-S502

Add and knead into a log. Leave to rest in a refrigerator for 12 hours. Cut into equal slices and bake at 170°C for 15 to 16 minutes (depending on the size).
