Berry-me-up

Inspired by the Callebaut product range for drinks, World Champion Latte Art Peter Hernou came up with this incredibly fruity and revitalising pick-me-up. It combines the intense taste of homemade dark chocolate ganache, the freshness of drinking yoghurt and the energising fruitiness of elderberry juice – all in one mix. Topped off with a bit of cardamom powder for a slight dose of pep, and ground cocoa nibs for a bit of intense cocoa taste and texture, this championing refreshment packs a punch and is a fantastic upper on a hot summer’s day.

Berry-me-up

ingredients preparation
  • 50g
    ganache
  • 80ml
    drinking yoghurt
  • 120ml
    elderberry juice

Fill a Boston shaker with the ingredients and shake firmly. Pour in a glass or cup filled with ice cubes.

Season with cardamom and a twist of the nibs grinder.

Tip: on hot days, serve with a luscious scoop of white chocolate ice cream to get the energy levels peaking.
