Mini pistachio financiers

Whereas traditional financiers are made with almonds, this recipe works with pistachio. It adds a spicy nut flavor on eating. A topping of pistachio bresilienne just before baking adds a delightful crisp.

Mini pistachio financiers

Ingredients Preparation
  • 250g
    whole egg(s)
  • 130g
  • 60g
    invert sugar

Beat slightly.

  • 200g
    Pure Pistachio Paste
  • 105g
    softened butter

Mix together and add to the egg mixture.

  • 25g
  • 1g

Mix in.

    Pistachio Bresilienne

Pour in Flexipan® Pomponettes. Decorate with cherries and sprinkle with pistachio bresilienne. Bake 8 minutes at 190°C.
