Chocolate Truffles

ingredients preparation
  • 470g
    cream 35 % fatĀ 
  • 80g
    glucose
  • 550g
    VHP Signature Dark Chocolate

Method

1 Bring to the boil Cream, Glucose

2 Pour over Chocolate and mix till emulsified

3 Agitate and cool on marble counter to pipable consistancy

4 Pipe and leave to crystalize for 1h

5 roll and coat in tempered chocolate and cover with cocao powder.
