Callebaut®’s Medium Roasted and Broken Hazelnuts are small pieces of 100% hazelnut from orchards in Spain, Italy and Turkey. Their taste combines a lovely lightly toasted hazelnut taste with the delicate fruity, nutty hints. 
They make for a wonderful texture to enrich and decorate your pralines and chocolate bars. They’re at their best when paired with chocolate for the complete indulgence, including delicate crisp. Mixed with pure chocolate, gianduja or hazelnut praline fillings, they will remain crispy. Our chefs recommend not to mix them with cream or dairy bases, since they tend to absorb the moisture, and may become soft and soggy.

Pistachio Bresilienne is a wonderfully crunchy texture made from medium roasted and chopped pistachios, which are caramelised into a golden, tasty, crispy delight. Simply sprinkle on wet chocolate before hardening to create wonderfully crispy nut covered chocolates.
Mixed into tempered chocolate, gianduja or hazelnut paste, Pistachio Bresilienne remains crunchy and adds a nice bite to confectionery or dessert textures. You can also sprinkle the bresilienne on top of desserts and pastries. When mixed into cream-based or moisture-based dessert components - such as chocolate mousse, crèmes, sauces – only apply it just before serving to keep the bresilienne from turning soggy.
Pistachio Bresilienne is vacuum-packed in a protective foil to preserve all its fresh taste.

Pure Pistachio Paste

Our Pure Pistachio Paste is a 100% pure, natural, and unsweetend paste made from lightly roasted and finely ground pistachios. It has a fresh green colour and a fruity taste with toasted hints. We carefully select the beste crips from orchards all over the world. Harvest when they're fully sunripe and stored the best conditions, our pistachios preseve the maximum amount of flavour and natural properties. They are shelled max. 12 hours before being rosted and packed within 12 hours.
Pistachio paste is great for flavouring ganaches, pastisseries crèmes, ice cream and sauces.

They're shelled max. 12 hours before they're roasted to protect their essential oils and preserve their delicate, fruity flavours. The hazelnuts are then mildly roasted and finely ground into a pure, smooth, golden paste.
Pure hazelnut paste brings out an intense hazelnut flavour with lovely toasted flavours and delicate fruitiness. Nuts - Pale Hazelnut Cream - 5kg Block

Mix of 59.5% milk chocolate and 40.5% hazelnut paste.
Hazelnut Cream Milk is a creamy and smooth mix of Callebaut®'s milk chocolate and pure hazelnut paste. It contains more hazelnut paste than traditional giandujas and has a softer texture. The cream is mixed, conched and tempered by our Master Concher to create a lovely balanced taste, and a smooth, homogeneous texture for great mouthfeel. 
Hazelnut Cream Milk comes in semi-solid, soft blocks and can easily be cut into confectionery delights or enrobed with chocolate.
After slight softening or mixing, it can be piped into moulded pralines, shells or chocolate bars and tablets. When melted, it becomes a delicious base for flavouring ice cream and pastry interiors such as mousse, bavarois and crémeux. This cream also adds a lovely mixed flavour of chocolate and hazelnuts to your desserts such as sabayon, mœlleux, etc. 

Nuts - Dark Hazelnut Cream - 5kg Block

Mix of 47.5% chocolate and 42.5% hazelnut paste.
Hazelnut Cream Dark is a smooth and creamy mix of Callebaut®'s dark chocolate and pure hazelnut  paste. It contains more hazelnut paste than gianduja and has a softer texture. The cream is mixed, conched and tempered by our Master Concher to create a lovely balanced taste, and a smooth, homogeneous texture for great mouthfeel.
