Almond Joy Edible Cookie Dough Ice Cream Sandwich

68g granulated sugar 332g brown sugar 400g butter 2g salt 308g Flour (toasted to 165F) 8g 47g Coconut Crunch 113g Almond Paste Pieces	Cream together the butter, sugars and salts. Mix in the flour and vanilla until just combined. Add in the inclusions and mix until just combined. Spread evenly into two 4.5 mm thick plastic frames. Freeze dough.

740g vanilla ice cream 350g Nut Pastes - Almond Paste - Natural - 45# pail 150g Dark 10K Chips 100g Caramelized Crunch Toppings - Almond Brittle Crunch - 30# carton 190g Caramelized Crunch Toppings - Coconut Crunch - 30# carton	Place two 11 mm thick plastic frames on top of one frame of edible cookie dough. Remove the frame from the other sheet of edible cookie dough and set aside. Mix the inclusions into the vanilla ice cream. Spread the vanilla ice cream into the two 11 mm frames and place the spare sheet of edible cookie dough on top. Freeze solid and then cut.
