Cowberry marmelade

ingredients preparation
  • 200g
    cowberry
  • 80g
    granulated sugar
  • 3g
    NH pectin

Mix all ingredients to make a marmalade. Cool down.

Ganache Gianduja

ingredients preparation
  • 170g
    cream 31%
  • 30g
    buckwheat honey
  • 200g
    GIM-P1PLAIS-LN

Mix and boil cream and buckwheat honey. Pour onto Cacao Barry chocolate.

Balsamico Gel

ingredients preparation
  • 100g
    granulated sugar
  • 100g
    glucose syrup
  • 100g
    raspberry puree
  • 100g
    balsamic vinegar
  • 10g
    sorbitol

Caramelise granulated sugar and glucose syrup. Add rest of ingredients. Reduce and cool down.
