Glaze with ruby rb1

    water
  • 233g
    glucose
  • 233g
    sugar

Boil to 104°C.

  • 233g
    raspberry puree
  • 110g
    gelatine mass
  • 2g
    Mona Lisa Power Flowers™ Red NON-AZO
  • 233g
    CHR-R35RB1
  • 117g
    mirror glaze

Pour over previous mixture. Mix well.

Pour in bowl, seal and keep in fridge. Heat to 35°C before use.
