Chocopraline Lime

Want to add a zesty surprise to your authentic Italian ice cream? Combine our delicately sweet 70% Belgian white chocolate flavour with Callebaut Crispearls White, grated lime zest and lime ganache pralines for a luscious mouthfeel that delivers on uniqueness with every bite: light, crunchy and a real treat for the eyes. The Chocopraline Lime is the perfect crowd-pleaser for your counter!

  1. Chocopraline Lime

Chocopraline Lime

ingredients preparation
  • 1bag(s)
    MXW-ICE70
  • 2400g
    hot water (70°-85°)
  • 300g
    lime juice
  • 40g
    dextrose
  • CEW-CC-W1CRI

Mix the Chocogelato, the dextrose with the hot water and mix with immersion blender for ± 2 mins. Cool down the gelato mix and when cold add the lime juice. Pour into batch freezer and start churning. When the gelato is ready take it out and mix with grated lime zest and Callebaut Crispearls White. Sprinkle the top with Callebaut Crispearls White and lime zest. Leave to rest in blast freezer to obtain more stability and better structure.
