Alto el Sol ganache

ingrediënten bereiding
  • 400g
    koude zware room
  • 70g
    glucose
  • 2g
    fijn zout
  • 600g
    CHD-P65ALTOBIO

Meng de volle room,  glucose en het zout in een kleine sauspan en breng aan de kook op een hoog vuur. 
Giet over de Alto El Sol chocolade en laat gedurende een minuutje rusten. 
Emulsifier met een handblender. 
Laat afkoelen tot 86°F/30°C alvorens in de chocoladevormen te spuiten.
