For the Cookie

  1. Preheat oven to 350
  2. Cream butter and sugar together
  3. Add in Almond paste and continue to beat until smooth
  4. Add in egg, vanilla, orange juice, and zest; beat well
  5. Mix in dry ingredients on low until combined
  6. Chill dough
  7. While dough is chilling, make the filling

For the Cookie Center

    Egg yolk
  • 2g
    vanilla

  1. Cream together almond schmear and cream cheese
  2. Add in egg yolk and vanilla until combined
  3. Add dry ingredients. Mix and set aside.

Preparation

  1. Scoop cookie dough, press down and make a thumb indentation in the center of the cookie
  2. Brush cookie dough with egg white; roll into sliced almonds
  3. Fill cookie center with the filling
  4. Bake for 14-16 minutes ; turn half way through
