Spanish roots meet French taste
Flashback to the 1980s. With a newly acquired agronomics degree and backed by his parents’ lifelong expertise in Spanish hazelnut orchards, Joaquim Barriach moved to France for a few years to study. There he acquired a passion for fine gourmet flavors. It inspired him to go back to his first love: Spanish hazelnuts. He was determined to bring a new generation of nut products to the market. Back in Spain, Joaquim started experimenting and completely reinvented the way pralinés, nut pastes and crocants are made. Absolute freshness, an incredibly tender, fruity taste and moderate sweetness are the first things that come to mind when tasting la Morella nuts products. The nuts are shelled only hours before they are further processed at la Morella nuts, to preserve all their natural freshness and properties. Gentle roasting highlights the best flavors each nut variety or harvest can offer. Within 24 hours they are vacuum packed to preserve their freshness and great taste. For the pralines, crocants and nougatines, the master praline makers at la Morella first caramelize the nuts to the right degree, to obtain the perfect balance between sweetness and fruitiness, and to obtain the right appealing color. After that, the crocants can be further refined and conched into tantalizing nut pralines.
