Currently the group has eight fully integrated Barry Callebaut Institutes, located around the world: in Belgium, France, Switzerland, UK, Poland, Canada, China and Singapore. With the infrastructure of the Barry Callebaut Institutes we can expertly answer each and every question on cocoa, chocolate and the technical aspects involved. We can also experiment with potential applications for chocolate at our centers.
Within the Barry Callebaut Institutes, you’ll find
A Research and Development Department
- where we study new raw materials and new processing techniques and develop new Barry Callebaut products. As we are a flexible, customer driven company, we also develop a lot of tailor-made recipes.
An Applications Laboratory
- that can serve as a mini-factory to simulate most of the production processes of our customers on a small scale;
- where we can test new and existing chocolate recipes using a range of processing techniques;
- where (working with our customers) we can seek the ideal chocolate composition and flavor profile for their specific products;
- that - after analysis, often at the customer’s premises - provides the solution to specific technical problems;
- where we can clarify the practical aspects of chocolate processing through demonstrations and workshops.
- with classrooms including individual workstations, where each individual can observe, practice and assimilate the techniques taught by our master chefs;
- with a multimedia auditorium where we can raise and discuss issues such as food and drug legislation, kosher and organic foodstuffs.
