Steamed chocolate pudding


130 g extra bitter chocolate
375 g salted butter
300 g brown sugar
540 g eggs
200 g flour
butter (for greasing)


Melt the chocolate and add to the butter. Stir the chocolate-butter mixture together with the sugar until smooth. Fold in the eggs and flour alternately. Mix carefully. Grease two pudding bowls with the butter and divide the mixture between them. Cover them carefully with aluminium foil.
Steam the pudding for two hours in a steaming pan, or in a bain-marie (with boiling water). Make sure the water does not spill over into the pudding bowls.
